Ingredients
- 2 boneless, skinless chicken breasts (or thighs)
- 1 tablespoon olive oil
- 2 tablespoons honey
- 1 tablespoon chipotle peppers in adobo sauce
- 1 cup cooked white or brown rice (or cauliflower rice)
- ½ cup black beans
- 1 cup cherry tomatoes
- ½ cup corn
- 1 small avocado
Instructions
- In a bowl, whisk together honey, chipotle peppers, smoked paprika, garlic powder, cumin, salt, black pepper, and lime juice.
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper; cook for 6–8 minutes per side until golden brown and cooked through.
- Drizzle the honey chipotle sauce over the chicken once it's cooked; let it rest for 5 minutes before slicing.
- In each serving bowl, layer rice, black beans, cherry tomatoes, corn, red onion, and avocado.
- Top each bowl with sliced chicken and drizzle with optional lime dressing.
