Ingredients

  • 1012 organic lemons (zest only)
  • 750 ml strong non-alcoholic lemon infusion
  • 4 cups water
  • 3 cups sugar

Instructions

  1. Wash and dry the lemons thoroughly, then peel only the yellow zest from each.
  2. Place lemon peels in a glass jar and cover with the non-alcoholic lemon infusion. Seal tightly and store in a cool, dark place for 7–30 days.
  3. In a saucepan, combine water and sugar; heat until sugar dissolves completely, then cool.
  4. Strain the infused liquid to remove the peels.
  5. Mix the cooled syrup into the strained lemon infusion.
  6. Bottle using clean glass containers and let rest for at least one week before serving.
  7. Chill in the freezer before enjoying.
