Ingredients

- 10–12 organic lemons (zest only)
- 750 ml strong non-alcoholic lemon infusion
- 4 cups water
- 3 cups sugar
Instructions
- Wash and dry the lemons thoroughly, then peel only the yellow zest from each.
- Place lemon peels in a glass jar and cover with the non-alcoholic lemon infusion. Seal tightly and store in a cool, dark place for 7–30 days.
- In a saucepan, combine water and sugar; heat until sugar dissolves completely, then cool.
- Strain the infused liquid to remove the peels.
- Mix the cooled syrup into the strained lemon infusion.
- Bottle using clean glass containers and let rest for at least one week before serving.
- Chill in the freezer before enjoying.
