Ingredients
- 3 tbsp butter
- 7 cups popcorn (popped)
- 1 tsp vanilla extract
- 1 scoop cake batter protein powder
- 50 regular-size vegan marshmallows
- Funfetti sprinkles
Instructions
- Prepare 7 cups of popped popcorn using your preferred method.
- In a large saucepan over low heat, melt the butter. Once melted, add the vegan marshmallows and stir until completely smooth.
- Remove from heat and mix in vanilla extract and cake batter protein powder. Pour this mixture over the popped popcorn and gently toss until evenly coated.
- Add Funfetti sprinkles and toss again to distribute evenly.
- Transfer the mixture to a parchment-lined baking dish and press firmly into an even layer using a spatula.
- Optional: Drizzle melted white chocolate over the top and add more sprinkles if desired.
- Allow to cool for about 30 minutes before cutting into squares or breaking into clusters.
