Ingredients
- 6 tbsp salted butter
- ½ cup light brown sugar
- ½ cup granulated sugar
- ½ cup sweetened condensed milk
- ½ cup light corn syrup
- ½ tsp vanilla extract
- 2 cups pecan halves
- 16 oz almond bark or high-quality chocolate
Instructions
- Preheat the oven to 350°F (175°C) and toast pecans on a baking sheet for 5–10 minutes until fragrant. Cool and chop.
- Line a baking sheet with parchment paper.
- In a microwave-safe bowl, melt butter, then combine with brown sugar, granulated sugar, sweetened condensed milk, and corn syrup. Microwave for 6–8 minutes until it reaches soft-ball stage (235°F).
- Stir in vanilla extract and chopped pecans.
- Drop spoonfuls of the mixture onto the prepared baking sheet and refrigerate for 20 minutes to set.
- Melt chocolate in the microwave or double boiler.
- Dip each caramel-pecan mound into melted chocolate using a fork, letting excess chocolate drip off.
- Place coated turtles back on parchment paper and allow to set.
