  • ½ cup granulated sugar
  • ½ cup sweetened condensed milk
  • ½ cup light corn syrup
  • ½ tsp vanilla extract
  • 2 cups pecan halves
  • 16 oz almond bark or high-quality chocolate

Instructions

  1. Preheat the oven to 350°F (175°C) and toast pecans on a baking sheet for 5–10 minutes until fragrant. Cool and chop.
  2. Line a baking sheet with parchment paper.
  3. In a microwave-safe bowl, melt butter, then combine with brown sugar, granulated sugar, sweetened condensed milk, and corn syrup. Microwave for 6–8 minutes until it reaches soft-ball stage (235°F).
  4. Stir in vanilla extract and chopped pecans.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet and refrigerate for 20 minutes to set.
  6. Melt chocolate in the microwave or double boiler.
  7. Dip each caramel-pecan mound into melted chocolate using a fork, letting excess chocolate drip off.
  8. Place coated turtles back on parchment paper and allow to set.
