Ingredients
- 800g lean ground beef (or turkey)
- 240g dry macaroni (whole wheat or chickpea pasta)
- 20g butter (or olive oil)
- 140g light cream cheese
- 50g shredded mozzarella
- 3–4 slices of melting cheese
- 75g each red, green & yellow bell peppers (or any mix!)
- 1 tbsp minced garlic
- 100g chopped white onion
- Salt, pepper, paprika & chili flakes (to taste)
- Fresh parsley for garnish
Instructions
- Cook the macaroni in salted water until al dente, reserving 125ml of pasta water before draining.
- In a large skillet, melt butter over medium heat and sauté minced garlic, onion, and bell peppers for about 4–5 minutes.
- Add ground beef to the skillet; cook for 5–7 minutes until browned. Drain excess fat and season with salt, pepper, paprika, and chili flakes.
- Lower heat and mix in cream cheese, mozzarella, and cheese slices until melted and creamy.
- Fold in cooked pasta along with reserved pasta water; stir until well combined.
