  • Bone-in chicken breast
  • Olive oil
  • Salt
  • Black pepper
  • Garlic powder
  • Butter
  • Fresh garlic, minced
  • Chicken broth
  • Dijon mustard
  • Wholegrain mustard
  • Fresh parsley, chopped
  • Cream
  • Potatoes, peeled
  • Milk or cream
  • Carrots, trimmed
  • Honey or maple syrup

Instructions

  1. Season bone-in chicken breasts with olive oil, garlic powder, salt, and pepper. Sear in a skillet over medium-high heat until golden brown and cooked through.
  2. In the same skillet, melt butter and sauté minced garlic until fragrant. Stir in chicken broth, Dijon mustard, wholegrain mustard, cream, and parsley; let simmer until thickened.
  3. Boil peeled potatoes in salted water until soft; mash with butter and milk or cream until smooth.
  4. In another skillet, melt butter and sauté trimmed carrots until softened. Drizzle honey or maple syrup over them and season before cooking until glossy.
