- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 cup heavy cream
- 1/2 cup white chocolate, melted
- 1/2 cup pistachios, finely chopped
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 325°F (160°C) and grease your springform pan.
- Combine graham cracker crumbs and melted butter in a bowl; press into the bottom of the springform pan to form the crust.
- In another bowl, beat cream cheese, powdered sugar, heavy cream, and vanilla extract until smooth.
- Fold in melted white chocolate, chopped pistachios, and eggs until just combined.
- Pour the filling over the crust and smooth the top.
- Bake for 45-50 minutes until set around the edges but slightly wobbly in the center.
- Allow to cool at room temperature before refrigerating for at least 4 hours.
