- 1 pound lean minced beef
- 1/2 medium onion, diced
- 3-4 garlic cloves, minced
- 1 cup dry orzo pasta
- 14 ounces tomato sauce
- 3/4 cup beef stock
- 1 cup heavy cream
- Fresh spinach leaves
- Grated parmesan cheese
Instructions
- In a large skillet, brown the minced beef with diced onion over medium heat for about 5-7 minutes. Add minced garlic and cook for another 2 minutes.
- Stir in dry orzo pasta, tomato sauce, and beef stock; bring to a gentle simmer. Cover and cook for approximately 10 minutes until orzo is tender.
- Lower the heat and mix in heavy cream and fresh spinach until the spinach wilts. Season with salt and pepper.
- Serve topped with freshly grated parmesan cheese.
