4 oz halloumi cheese, sliced
1 cup cooked lentils
1 cup canned chickpeas, rinsed
1 cup diced roasted beetroot
1 tablespoon olive oil
1 teaspoon lemon juice
Salt and pepper, to taste
Instructions
In a mixing bowl, combine the cooked lentils, rinsed chickpeas, and diced roasted beetroot. Add olive oil, lemon juice, salt, and pepper. Toss gently until well mixed.
Heat a non-stick grill pan over medium heat. Grill the sliced halloumi cheese for 2-3 minutes on each side until golden brown.
On a plate, create a base with the lentil mixture and top it with grilled halloumi slices. Serve warm or at room temperature.
