- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 2 tbsp red onion, thinly sliced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper, to taste
- Fresh parsley for garnish
