- 1 chicken breast
- 1 cup cooked white rice
- 1 cup cucumber, sliced
- 1 cup cherry tomatoes
- 2-3 lettuce leaves
- 1 red onion, thinly sliced
- 1 cup plain Greek yogurt
- Fresh herbs (parsley, dill, or cilantro), chopped
- 1 tsp lemon juice
- 1 tsp olive oil
- Salt & pepper, to taste
Instructions
- Season the chicken breast with salt, pepper, and olive oil. Grill or pan-sear for 5-6 minutes per side until fully cooked; then slice into strips.
- Cook the rice according to package instructions and let it cool slightly.
- In a small bowl, mix Greek yogurt with fresh herbs, lemon juice, salt, pepper, and optional chili flakes until smooth.
- Slice cucumber into rounds, halve cherry tomatoes, tear lettuce into pieces, and thinly slice red onion.
- In a serving bowl, layer the rice as the base and top it with sliced chicken, vegetables, and a generous dollop of herb yogurt sauce.
