  • 1 cup cooked white rice
  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes
  • 2-3 lettuce leaves
  • 1 red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • Fresh herbs (parsley, dill, or cilantro), chopped
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • Salt & pepper, to taste

Instructions

  1. Season the chicken breast with salt, pepper, and olive oil. Grill or pan-sear for 5-6 minutes per side until fully cooked; then slice into strips.
  2. Cook the rice according to package instructions and let it cool slightly.
  3. In a small bowl, mix Greek yogurt with fresh herbs, lemon juice, salt, pepper, and optional chili flakes until smooth.
  4. Slice cucumber into rounds, halve cherry tomatoes, tear lettuce into pieces, and thinly slice red onion.
  5. In a serving bowl, layer the rice as the base and top it with sliced chicken, vegetables, and a generous dollop of herb yogurt sauce.
