  • 1 cup romaine or green leaf lettuce, shredded
  • 1 cup cucumber, sliced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • 1-2 tbsp ranch dressing or yogurt-based dressing

Instructions

  1. Grill the seasoned chicken breast over medium-high heat for 6-8 minutes on each side until fully cooked. Let it rest before slicing.
  2. In a skillet, heat olive oil and sauté sliced carrots with garlic powder, oregano, salt, and pepper for about 5-7 minutes until tender yet crunchy.
  3. Prepare the veggies by washing and chopping the romaine lettuce and slicing cucumber.
  4. In a large mixing bowl, layer the lettuce, followed by grilled chicken strips, sautéed carrots, and cucumber rounds. Drizzle with ranch dressing.
  5. Garnish with lemon juice or fresh herbs if desired. Enjoy immediately or store for later!
