- 1 chicken breast, grilled and sliced
- 1 cup carrots, sliced
- 1 cup romaine or green leaf lettuce, shredded
- 1 cup cucumber, sliced
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- Salt and black pepper to taste
- 1-2 tbsp ranch dressing or yogurt-based dressing
Instructions
- Grill the seasoned chicken breast over medium-high heat for 6-8 minutes on each side until fully cooked. Let it rest before slicing.
- In a skillet, heat olive oil and sauté sliced carrots with garlic powder, oregano, salt, and pepper for about 5-7 minutes until tender yet crunchy.
- Prepare the veggies by washing and chopping the romaine lettuce and slicing cucumber.
- In a large mixing bowl, layer the lettuce, followed by grilled chicken strips, sautéed carrots, and cucumber rounds. Drizzle with ranch dressing.
- Garnish with lemon juice or fresh herbs if desired. Enjoy immediately or store for later!
