Ingredients
- 2 chicken breasts
- 1 large avocado, diced
- 1 cup cherry tomatoes, halved
- 1 cup chopped fresh cilantro
- 1 cup lettuce or mixed greens (optional)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp lemon juice
- 2 tbsp olive oil (for dressing)
- 1 tbsp fresh lime juice
- 1 tsp honey
- 1 tsp Dijon mustard
- Salt & pepper to taste (for dressing)
Instructions
- Rub chicken breasts with olive oil, lemon juice, garlic powder, paprika, salt, and black pepper.
- Grill chicken over medium heat for 5-6 minutes on each side until fully cooked (internal temperature of 165°F). Let rest before slicing.
- Whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper in a mixing bowl.
- In a large bowl, combine diced avocado, halved cherry tomatoes, chopped cilantro, and lettuce (if using). Toss gently.
- Top the salad mixture with sliced grilled chicken and drizzle with dressing before serving.
