  • 1 tsp salt

  • 1 tsp Dijon mustard
  • Salt & pepper to taste (for dressing)

Instructions

  1. Rub chicken breasts with olive oil, lemon juice, garlic powder, paprika, salt, and black pepper.
  2. Grill chicken over medium heat for 5-6 minutes on each side until fully cooked (internal temperature of 165°F). Let rest before slicing.
  3. Whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper in a mixing bowl.
  4. In a large bowl, combine diced avocado, halved cherry tomatoes, chopped cilantro, and lettuce (if using). Toss gently.
  5. Top the salad mixture with sliced grilled chicken and drizzle with dressing before serving.
