Ingredients
For the Chicken Salad
1 grilled chicken breast, sliced
1 ripe avocado, cubed (or 1/2 avocado sliced on top)
1 cup cherry tomatoes, halved
1/4 red onion, finely chopped
2 tablespoons chopped fresh cilantro or parsley
2 cups mixed greens or chopped romaine
For the Dressing
1 tablespoon olive oil
1 tablespoon lemon juice or lime juice
Salt, to taste
Black pepper, to taste
Pinch of garlic powder or chili flakes (optional)
Instructions
- If not already prepared, grill the chicken breast over medium heat for 5 to 7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then slice.
- In a large bowl, combine the mixed greens, cherry tomatoes, red onion, and chopped herbs.
- Add the sliced grilled chicken and cubed or sliced avocado on top.
- In a small bowl, whisk together the olive oil, lemon or lime juice, salt, pepper, and optional garlic powder or chili flakes.
- Drizzle the dressing over the salad and gently toss to combine, or serve with the dressing spooned over the top.
- Serve immediately while fresh.
