- 2-3 roasted green chiles (like Hatch or poblano)
- 1 large potato (peeled and diced)
- 1 onion (finely chopped)
- 2 medium tomatoes (diced)
- 2 cloves garlic (minced)
- ½ tsp ground cumin
- ½ tsp ground coriander
- ½ tsp dried oregano
- Salt and pepper (to taste)
- ¼ cup beef broth or water
- 2 tbsp olive oil
Instructions
- In a large skillet over medium heat, add olive oil. Once hot, brown the ground beef until fully cooked. Drain excess fat if necessary.
- Add the chopped onion and minced garlic to the skillet, sautéing until softened.
- Stir in the roasted green chiles and diced tomatoes; cook for about 5 minutes.
- Add the diced potato and optional peas along with the broth or water. Season with cumin, coriander, oregano, salt, and pepper.
- Cover and simmer for 20-25 minutes until potatoes are tender.
