Ingredients
- 1 pound flank steak (or strip steak)
- 3 tablespoons olive oil
- 3 tablespoons red apple vinegar
- 3 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 tablespoon ground cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- 4 large pita bread
- 1 cup fresh tomatoes, diced
- 1 cup cucumber, chopped
- 1 small red onion, thinly sliced
Instructions
- Marinate the Steak: In a large bowl, combine olive oil, red apple vinegar, minced garlic, oregano, cumin, salt, and pepper. Add the steak and coat evenly. Cover and refrigerate for at least 30 minutes.
- Preheat Grill: Heat your grill or grill pan over medium-high heat.
- Cook the Steak: Remove the steak from the marinade and grill for 4-5 minutes per side until desired doneness.
- Rest & Slice: Let the steak rest for 5-10 minutes before slicing thinly against the grain.
- Prepare Tzatziki: Mix Greek yogurt, lemon juice, dill, and salt in a bowl.
- Warm Pita: Lightly grill or warm pita bread until soft.
- Assemble Gyros: Layer sliced steak, diced tomatoes, chopped cucumber, red onion, and tzatziki sauce on each pita. Wrap and serve immediately.
