- 1 head cauliflower (cut into florets, about 2 lbs)
- 4 tablespoons extra-virgin olive oil (divided)
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Juice and zest of one lemon
- 1/2 teaspoon kosher salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- 2 oz. crumbled feta cheese
- 2 tablespoons chopped fresh herbs (such as dill, mint, or basil)
Instructions
- Preheat your oven to 425°F.
- In a mixing bowl, combine cauliflower florets with 2 tablespoons of olive oil, oregano, garlic powder, lemon zest, salt, and pepper; toss until well-coated.
- Spread the seasoned cauliflower evenly on a baking sheet.
- Roast for 25-30 minutes, tossing halfway through until golden brown and tender.
- Transfer to a serving dish and top with crumbled feta cheese and fresh herbs. Drizzle with remaining olive oil and squeeze fresh lemon juice over the top before serving.
