Ingredients
- ¾ cup Greek yogurt (non-fat)
- 1 cup self-raising flour (or all-purpose)
- 1½ tablespoons extra virgin olive oil
- 2½ cups fresh spinach
- 100g feta cheese
- Lemon wedges for serving
Instructions
- In a large bowl, combine flour, salt, and yogurt (add baking powder if using all-purpose flour). Mix until it forms a rough ball.
- Knead on a floured surface for 3–5 minutes until smooth; let rest for 10 minutes.
- For the filling, massage chopped spinach in a bowl, crumble in feta cheese, season with salt and pepper, and mix well.
- Divide the dough into two parts; roll each into thin circles (10–12 inches).
- Place half of the filling on one side of each circle; fold over to seal edges tightly.
- Heat olive oil in a non-stick frying pan over medium heat; cook each gozleme for 3–5 minutes per side until golden brown.
