  • 1 lb sirloin steak, cut into bite-sized pieces
  • 2 cups shredded sharp cheddar cheese
  • 1 package (20 oz) cheese tortellini
  • 2 cups milk
  • 1 cup beef broth
  • ½ cup shredded mozzarella
  • Salt & black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 1 tsp Dijon mustard, optional
  • 1 tsp paprika
  • 2 tbsp chopped parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Season the steak with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear the steak pieces for 2–3 minutes until browned. Set aside.
  3. In the same skillet, melt butter and sauté minced garlic for about 30 seconds. Stir in flour and cook for one minute to form a roux. Gradually whisk in milk and beef broth until smooth, then mix in cheddar cheese until creamy.
  4. Cook tortellini according to package directions but slightly undercook; drain and toss with olive oil.
  5. Grease a baking dish and combine tortellini, seared steak, and cheese sauce in it. Top with shredded mozzarella.
  6. Bake uncovered for 20–25 minutes until bubbly and golden brown.
