Instructions
- Prepare the Galette Dough: Mix flour and salt in a bowl, cut in butter until crumbly, then add ice water to form dough. Refrigerate for 30 minutes.
- Roast the Butternut Squash: Preheat oven to 400°F (200°C). Cube squash, toss with olive oil, salt, and pepper, then roast for 25-30 minutes.
- Caramelize Onions: Sauté sliced onions in olive oil over medium heat until softened and caramelized (about 15 minutes).
- Assemble the Galette: Roll out chilled dough into a circle, spread caramelized onions on top, add roasted squash and crumbled goat cheese, sprinkle with thyme.
- Bake: Fold edges of crust over filling, brush with olive oil, and bake for 25-30 minutes until golden brown.
