- 1 large egg
- 1 cup rolled oats
- 1/2 cup unsalted butter (softened) for frosting
- 4 ounces cream cheese (brick style, full fat)
- 1 1/2 – 2 1/2 cups powdered sugar
- 1 teaspoon vanilla extract for frosting
- 1/4 teaspoon salt for frosting
- 1 tablespoon whipping cream (if needed)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, mix together flour, ginger powder, cinnamon, baking soda, and salt.
- Cream softened butter with brown and granulated sugar until fluffy.
- Add molasses, vanilla extract, and egg to the butter mixture; beat well.
- Gradually incorporate dry ingredients into the wet mix followed by rolled oats.
- Scoop tablespoon-sized dough onto prepared sheets and bake for 9 minutes until edges are golden.
- For the frosting, beat softened butter and cream cheese; gradually add powdered sugar until desired sweetness is reached.
- Once cookies cool completely, spread frosting between two cookies to form sandwiches.
