- 1 cup melted butter
- 1 ½ cups brown sugar (packed)
- 1 large egg
- 1 egg yolk
- 2 ½ cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 3/4 cup sweetened shredded coconut
- 1/2 cup chopped pecans
- 2 ounces semisweet chocolate (chopped)
Instructions
- Preheat your oven to 375°F and line baking sheets with parchment paper.
- In a mixing bowl, combine melted butter and brown sugar until well mixed. Let cool for about 5 minutes.
- Add one egg and one egg yolk, mixing until combined. Stir in vanilla extract.
- In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add to the wet ingredients until just combined.
- Fold in coconut, pecans, and chopped chocolate.
- Using a medium cookie scoop, drop dough onto prepared sheets, spacing them two inches apart.
- Bake for 8–12 minutes or until edges are set; let cool on the sheet for five minutes before transferring to a wire rack.
