Ingredients
- 2 cups Broccoli florets
- 2 cups Cauliflower florets
- 2 cups Carrots, sliced
- 1 medium Red bell pepper, chopped
- 1 medium Yellow bell pepper, chopped
- 4 tablespoons Olive oil
- 4 cloves Garlic, minced
- Salt to taste
- Pepper to taste
- 1 teaspoon Dried oregano
- 1 teaspoon Dried thyme
- 1/4 cup Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and chop the vegetables into bite-sized pieces.
- In a large mixing bowl, combine the vegetables with olive oil, minced garlic, salt, pepper, oregano, and thyme. Toss well to coat.
- Spread the seasoned vegetables evenly on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through until tender and caramelized.
- Remove from the oven and garnish with fresh parsley before serving.
