Ingredients
- 2 large sweet potatoes, peeled and cubed
- 4 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: Chopped fresh parsley for garnish
Instructions
- Preheat oven to 425°F (220°C).
- In a mixing bowl, combine cubed sweet potatoes with olive oil, garlic, Italian seasoning, salt, pepper, and half of the Parmesan cheese. Toss until evenly coated.
- Spread sweet potato mixture on a baking sheet in a single layer.
- Roast for about 25 minutes or until golden brown and tender.
- In the last five minutes of cooking, sprinkle remaining Parmesan on top and return to oven until melted.
- Remove from oven and garnish with fresh parsley before serving.
