Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 1/2 cup grated parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
Instructions
- Wash and halve the baby potatoes, then mince the garlic.
- Rub chicken breasts with olive oil and season with Italian seasoning, salt, black pepper, and optional red pepper flakes.
- Layer halved potatoes in the bottom of a slow cooker and place seasoned chicken on top.
- Pour chicken broth over the mixture, followed by the minced garlic and grated parmesan cheese.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken reaches an internal temperature of 165°F (75°C).
- Serve hot with any remaining sauce spooned over the top.
