- 1 chicken breast, sliced
- 2 garlic cloves, minced
- Salt & pepper, to taste
- 1 cup cooked jasmine or basmati rice
- 2 medium carrots, peeled and cut into sticks
- 1 tbsp olive oil
- 1 tbsp butter
- Chili flakes (optional)
- Scallions (optional)
- Drizzle of honey mustard or garlic aioli (optional)
Instructions
- Preheat your oven to 200C (400F). Toss carrot sticks in olive oil, salt, and pepper; spread on an oven tray and roast for 25-30 minutes until tender.
- Cook rice according to package instructions and keep warm.
- In a skillet over medium heat, melt butter and sauté minced garlic until fragrant. Season sliced chicken with salt and pepper before cooking for 5-7 minutes until golden brown.
- Assemble your bowl by layering rice first, followed by chicken slices and roasted carrots. Garnish with scallions and a drizzle of honey mustard if desired.
