  • 2 garlic cloves, minced
  • Salt & pepper, to taste
  • 1 cup cooked jasmine or basmati rice
  • 2 medium carrots, peeled and cut into sticks
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Chili flakes (optional)
  • Scallions (optional)
  • Drizzle of honey mustard or garlic aioli (optional)

Instructions

  1. Preheat your oven to 200C (400F). Toss carrot sticks in olive oil, salt, and pepper; spread on an oven tray and roast for 25-30 minutes until tender.
  2. Cook rice according to package instructions and keep warm.
  3. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant. Season sliced chicken with salt and pepper before cooking for 5-7 minutes until golden brown.
  4. Assemble your bowl by layering rice first, followed by chicken slices and roasted carrots. Garnish with scallions and a drizzle of honey mustard if desired.
