- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/4 teaspoon salt
- 1/2 cup crushed peppermint candies (divided)
- Optional: 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper for easy removal.
- Melt the unsalted butter in a microwave-safe bowl and let it cool slightly.
- In a large bowl, combine melted butter with granulated sugar, then mix until smooth. Add eggs and vanilla, mixing well.
- In another bowl, whisk together flour, cocoa powder, and salt. Gradually add to wet ingredients until just combined.
- Fold in half of the crushed peppermint candies and chocolate chips if using.
- Pour the batter into the prepared pan, spreading it evenly. Sprinkle remaining crushed peppermint on top.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
- Allow brownies to cool completely before lifting them out using the parchment paper overhang. Cut into squares and enjoy!
