  • 1 can (15 oz) chili beans in sauce
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 packet (1 oz) chili seasoning mix
  • 2 cups shredded cheddar cheese
  • 2 cups shredded iceberg lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1/2 cup sliced black olives (optional)
  • 1 cup Fritos corn chips
  • 1 cup sour cream
  • 1/2 cup salsa
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess fat.
  2. Add the chili seasoning mix along with chili beans, kidney beans, and diced tomatoes. Simmer for 10-15 minutes until heated through and slightly thickened. Season with salt and pepper.
  3. In a large bowl or serving dish, layer the shredded lettuce as the base.
  4. Spoon the warm chili mixture over the lettuce and top with cheddar cheese, cherry tomatoes, red onion, and olives if using.
  5. Just before serving, sprinkle Fritos on top for crunch.
  6. In a small bowl, mix sour cream and salsa; drizzle over salad or serve on the side.
