- 1 lb ground beef
- 1 can (15 oz) chili beans in sauce
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 packet (1 oz) chili seasoning mix
- 2 cups shredded cheddar cheese
- 2 cups shredded iceberg lettuce
- 1 cup cherry tomatoes, halved
- 1/2 cup diced red onion
- 1/2 cup sliced black olives (optional)
- 1 cup Fritos corn chips
- 1 cup sour cream
- 1/2 cup salsa
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess fat.
- Add the chili seasoning mix along with chili beans, kidney beans, and diced tomatoes. Simmer for 10-15 minutes until heated through and slightly thickened. Season with salt and pepper.
- In a large bowl or serving dish, layer the shredded lettuce as the base.
- Spoon the warm chili mixture over the lettuce and top with cheddar cheese, cherry tomatoes, red onion, and olives if using.
- Just before serving, sprinkle Fritos on top for crunch.
- In a small bowl, mix sour cream and salsa; drizzle over salad or serve on the side.
