Ingredients
- 1 cup long-grain rice
- 2 cups vegetable or chicken broth
- 1 medium lemon (juiced and zested)
- 2 tablespoons olive oil
- 2 garlic cloves (minced)
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ¼ teaspoon black pepper
- Fresh parsley (chopped, for garnish)
Instructions
- Rinse the rice in cold water using a fine mesh strainer until the water runs clear.
- Heat the vegetable or chicken broth in a saucepan until simmering.
- In a large pot, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add the rinsed rice to the pot and sauté for about 2-3 minutes.
- Stir in the simmering broth, lemon juice and zest, oregano, salt, and black pepper.
- Bring to a boil, then reduce heat to low and cover to let simmer for 15-18 minutes.
- Remove from heat and let sit covered for 5 minutes before fluffing with a fork and garnishing with parsley.
