- 2 cups diced sweet potatoes
- 1/2 tablespoon olive oil
- 6 cups mixed greens, roughly chopped
- 1 1/2 cups shredded chicken
- 1 cup diced apple
- 2 tablespoons dried cranberries
- 2 tablespoons pumpkin seeds
- 1/4 cup orange vinaigrette
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss diced sweet potatoes with olive oil, salt, and pepper on the baking sheet. Roast for 25-35 minutes until browned and fork-tender.
- While the potatoes roast, prepare your dressing in a jar with a lid by combining all ingredients and shaking well.
- Chop mixed greens and dice apples while the sweet potatoes cool slightly after roasting.
- In a large bowl, combine mixed greens, shredded chicken, roasted sweet potatoes, diced apples, cranberries, pumpkin seeds, and goat cheese (if using). Drizzle with dressing and toss gently to combine.
