- 1 lb boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can (14 oz) coconut milk

- 1 onion, diced

- 1 red bell pepper, sliced

- Fresh cilantro for garnish
Instructions
- Prepare your ingredients by dicing the onion, mincing the garlic, slicing the bell pepper, and juicing the lime.
- In your slow cooker, add chicken breasts, chicken broth, coconut milk, red curry paste, onion, garlic, and bell pepper.
- Cook on low for 6-7 hours or high for 3-4 hours until the chicken is fully cooked.
- Shred the chicken using two forks and return it to the soup.
- Stir in lime juice before serving.
- Ladle into bowls and garnish with fresh cilantro.
