Ingredients
- 2 chicken breasts
- 1 15-oz can black beans
- 1 15.25-oz can corn (undrained)
- 1 10-oz can Rotel tomatoes (undrained)
- 1 package ranch dressing mix
- 1 tsp cumin
- 1 Tbsp chili powder
- 1 tsp onion powder
- 1 8-oz package light cream cheese
Instructions
- Drain and rinse the black beans under cold water. Place chicken breasts at the bottom of the crock pot.
- Add the undrained corn and Rotel tomatoes, followed by the black beans.
- Sprinkle ranch dressing mix, cumin, chili powder, and onion powder on top. Stir gently to combine.
- Place cream cheese block on top of the mixture without stirring.
- Cover and set to low heat; cook for 6-8 hours until chicken is tender.
- Remove chicken, shred it with two forks, and return it to the pot. Stir well before serving.
