  • 4 pieces uncooked turkey bacon, diced
  • 1 small white onion, finely diced
  • 1 jalapeno, diced (more for extra heat)
  • 4 garlic cloves, minced
  • 1 (12-ounce) bottle dark Mexican beef broth
  • 4 (15-ounce) cans pinto beans, rinsed and drained
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon cumin
  • 1 tablespoon fresh lime juice
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook turkey bacon in a large sauté pan over medium-high heat until crispy. Remove with a slotted spoon and set aside.
  2. In the same pan, reserve one tablespoon of the bacon grease. Sauté onion and jalapeno for about five minutes until soft. Add garlic and sauté for another minute.
  3. Stir in beef broth, pinto beans, brown sugar, oregano, chili powder, salt, and cumin. Mix well and bring to a simmer.
  4. Reduce heat to medium-low and let simmer uncovered for about 15 minutes.
  5. Stir in the cooked turkey bacon and lime juice before serving. Garnish with fresh cilantro.
