- 4 pieces uncooked turkey bacon, diced
- 1 small white onion, finely diced
- 1 jalapeno, diced (more for extra heat)
- 4 garlic cloves, minced
- 1 (12-ounce) bottle dark Mexican beef broth
- 4 (15-ounce) cans pinto beans, rinsed and drained
- 1 tablespoon brown sugar
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1 teaspoon salt
- ½ teaspoon cumin
- 1 tablespoon fresh lime juice
- ¼ cup chopped fresh cilantro
Instructions
- Cook turkey bacon in a large sauté pan over medium-high heat until crispy. Remove with a slotted spoon and set aside.
- In the same pan, reserve one tablespoon of the bacon grease. Sauté onion and jalapeno for about five minutes until soft. Add garlic and sauté for another minute.
- Stir in beef broth, pinto beans, brown sugar, oregano, chili powder, salt, and cumin. Mix well and bring to a simmer.
- Reduce heat to medium-low and let simmer uncovered for about 15 minutes.
- Stir in the cooked turkey bacon and lime juice before serving. Garnish with fresh cilantro.
