- 1 cup finely chopped dates
- 1 tsp baking soda
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter
- 2 large eggs
- 1 cup all-purpose flour
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1 cup brown sugar
- 1/4 cup light corn syrup
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine chopped dates and baking soda with one cup of boiling water. Let sit for 15 minutes.
- In a large bowl, cream the butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, followed by vanilla extract.
- Gently fold in the flour until just combined, then stir in the softened date mixture.
- Pour into a greased baking dish and bake for 30-35 minutes or until a toothpick comes out clean.
- For the toffee sauce, combine heavy cream, brown sugar, and light corn syrup in a saucepan over medium heat until thickened (about 5 minutes).
- Cool slightly before serving warm pudding drizzled with toffee sauce.
