  • 1 teaspoon peanut oil (or vegetable oil)
  • 2 teaspoons cornstarch
  • 1/2 cup homemade chili oil (and more to taste)
  • 3 tablespoons chinkiang vinegar
  • 1/4 cup apple vinegar (or dry apple juice)
  • 4 teaspoons light soy sauce
  • 4 teaspoons dark soy sauce
  • 1 tablespoon peanut oil (or vegetable oil)
  • 8 cloves garlic (minced)
  • 2 inches ginger (minced)
  • 1 red onion (thinly sliced)
  • 1 hot green chili (sliced)
  • 1/2 bunch cilantro (chopped)

Instructions

  1. Prepare the noodles if making homemade; boil water for cooking.
  2. Marinate lamb with spices, vinegar, and cornstarch for at least 15 minutes.
  3. Stir-fry garlic and ginger in heated oil, then add marinated lamb until cooked through.
  4. Mix in boiled noodles and sauces; toss well.
