Ingredients
- 1 to 2 pounds of thick-cut Turkey Bacon (cooked)
- 3 green tomatoes (cut into slices)
- 1/2 cup of cornmeal
- 1/2 cup of flour
- 1/2 cup milk
- 1 egg
- 1/2 cup oil for frying
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon cayenne spice
- 1/2 teaspoon sugar
- Lettuce
- 12 pieces of high-quality white bread
- 1/2 cup of Duke's mayonnaise
- 1 tablespoon spicy brown mustard
- 2 teaspoons pickle juice
- 1 to 2 teaspoons grated horseradish
- 1 teaspoon paprika
- 1/2 teaspoon Cajun or Creole spice mix
- 4 dashes of hot sauce
Instructions
- Slice green tomatoes into thick rounds and set aside.
- In one bowl, whisk together milk and egg. In another bowl, mix cornmeal, flour, salt, pepper, cayenne spice, and sugar.
- Heat oil in a cast-iron skillet over medium-high heat.
- Coat tomato slices first in the milk mixture, then in the breading mixture.
- Fry each slice until golden brown (about 3-4 minutes per side). Drain on paper towels.
- Mix mayonnaise, spicy brown mustard, pickle juice, horseradish, paprika, Cajun spice mix, and hot sauce in a small bowl for the sauce.
- Assemble your sandwich: spread sauce on bread slices, layer with lettuce and fried tomatoes, add turkey bacon, and top with another slice of bread.
- Serve immediately.
