  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon cayenne spice
  • 1/2 teaspoon sugar
  • Lettuce
  • 12 pieces of high-quality white bread
  • 1/2 cup of Duke's mayonnaise
  • 1 tablespoon spicy brown mustard
  • 2 teaspoons pickle juice
  • 1 to 2 teaspoons grated horseradish
  • 1 teaspoon paprika
  • 1/2 teaspoon Cajun or Creole spice mix
  • 4 dashes of hot sauce

Instructions

  1. Slice green tomatoes into thick rounds and set aside.
  2. In one bowl, whisk together milk and egg. In another bowl, mix cornmeal, flour, salt, pepper, cayenne spice, and sugar.
  3. Heat oil in a cast-iron skillet over medium-high heat.
  4. Coat tomato slices first in the milk mixture, then in the breading mixture.
  5. Fry each slice until golden brown (about 3-4 minutes per side). Drain on paper towels.
  6. Mix mayonnaise, spicy brown mustard, pickle juice, horseradish, paprika, Cajun spice mix, and hot sauce in a small bowl for the sauce.
  7. Assemble your sandwich: spread sauce on bread slices, layer with lettuce and fried tomatoes, add turkey bacon, and top with another slice of bread.
