Ingredients
- 1 lb boneless skinless chicken breasts/thighs
- 2 cups chicken broth
- 1 (15 oz) can cannellini beans
- 1 (15 oz) can great northern beans
- 1 (4 oz) can diced green chiles
- 1 cup onion (chopped)
- 3 cloves garlic (minced)
- 8 oz cream cheese (softened)
- 1/2 tsp cumin
- 1/2 tsp oregano (dried)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp chili powder
- 2 tbsp cilantro (fresh, chopped)
- 2 tbsp lime juice
Instructions
- Chop the onion and mince the garlic. Drain both cans of beans.
- In a slow cooker, combine the beans, onion, garlic, chicken broth, and spices.
- Place the chicken on top of the mixture, ensuring it's covered.
- Cover and cook on low for 7 hours or high for 4 hours until chicken is cooked through.
- Shred the chicken in the pot with two forks and stir until well mixed.
