Ingredients
- 1 1/2 lbs boneless skinless chicken breasts
- 1 cup frozen corn
- 2 cans fire roasted tomatoes and green chiles
- 2 cans cannellini beans
- 2 cups low sodium chicken broth
- 1/2 cup buffalo sauce
- 4 oz cream cheese (room temperature)
- 4 oz cottage cheese (blended)
Instructions
- Combine all ingredients except cream cheese and cottage cheese in the slow cooker. Stir until mixed.
- Cover and cook on low for 4–6 hours or high for 3–4 hours until chicken is fully cooked.
- Remove chicken, shred using forks or a hand mixer, then return to the slow cooker.
- Mix in cream cheese until smooth, cover, and cook on low for an additional 30 minutes.
- Stir in blended cottage cheese until combined. Taste and adjust seasoning as needed before serving.
