Ingredients
- 16 corn tortillas (6-inch)
- 1 pound ground beef
- 2 cups refried beans
- 2 cups enchilada sauce
- 8 ounces shredded cheddar cheese
- Vegetable oil (for frying)
Instructions
- Heat vegetable oil in a skillet over medium heat. Fry the corn tortillas one or two at a time until golden brown (2-3 minutes each side). Drain on paper towels and season lightly with salt.
- Preheat oven to 350°F (175°C).
- In a separate pan, heat 1 tablespoon of vegetable oil. Cook the ground beef until browned (6-7 minutes). Add taco seasoning and simmer for 10 minutes.
- On a baking sheet, layer crispy tortillas with enchilada sauce, refried beans, seasoned beef, another tortilla, more sauce, and top with cheddar cheese.
- Bake for about 10 minutes or until cheese is melted and bubbly.
