  • 1 lb ground lamb or beef
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup flat-leaf parsley, finely chopped
  • 1 medium tomato, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Olive oil for brushing
  • 4 large Lebanese-style pita breads
  • ½ cup grated Gruyere cheese

Instructions

  1. In a mixing bowl, combine the ground lamb or beef with onion, garlic, parsley, grated tomato, and spices. Mix until well blended.
  2. Cut each pita in half to create pockets and stuff each pocket with the meat mixture and some Gruyere cheese.
  3. Brush the outside of each stuffed pita generously with olive oil.
  4. Preheat your oven to 375°F (190°C) and bake the stuffed pitas on a baking sheet for about 15 minutes until crispy and golden.
  5. Serve warm with your choice of dipping sauce.
