Ingredients
- 2 lbs organic chicken breasts
- 16 oz potato gnocchi
- 5 cups organic chicken broth
- 1 lemon (sliced and juiced)
- 2 cups chopped organic kale
- 4 Tbsps all-purpose flour
- 4 garlic cloves (minced)
- Olive oil
- Sea salt
- Black pepper
Instructions
- In a large pot, heat olive oil over medium heat. Season the chicken with salt and pepper; cook until browned on both sides. Remove and set aside.
- In the same pot, melt butter and sauté garlic and thyme for about 2 minutes.
- Sprinkle flour over the mixture, stirring well. Gradually add chicken broth while whisking until smooth.
- Return the cooked chicken along with sliced lemon and zest; simmer for about 10 minutes.
- Add gnocchi to the broth and cook according to package instructions until they float.
- Stir in lemon juice, heavy cream, chopped kale, and grated cheese; simmer for an additional 5 minutes before serving.
