- 1 onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 6 cups vegetable broth
- 1 cup heavy cream (or coconut cream)
- 1 package (16 oz) gnocchi
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion until translucent, then add minced garlic, carrots, and celery. Cook until softened.
- Pour in vegetable broth and bring to a gentle boil. Reduce heat and simmer for 10 minutes.
- Stir in coconut cream (or heavy cream) until well combined. Add gnocchi and cook according to package instructions until they float.
- Stir in fresh spinach until wilted and season with salt and pepper before serving hot.
