Instructions
- Prepare your ingredients: mince garlic, grate Parmesan, and cut turkey sausage into small pieces.
- Cook pasta: Boil rigatoni in salted water until al dente, then drain and reserve some cooking water.
- Cook sausage and sauce: In a skillet, melt butter over medium heat. Add turkey sausage and cook until browned. Stir in garlic and cook for one minute. Add tomato paste; cook for another three minutes.
- Combine: Add oregano, salt, and pepper. Pour in heavy cream and bring to a gentle boil. Stir in Parmesan until melted.
- Finish the dish: Toss the cooked rigatoni into the skillet with the sauce, adjusting consistency with reserved pasta water as needed.
