  • 1 cup cherry tomatoes
  • 1/2 red bell pepper
  • 1/2 yellow onion
  • 1 Tbsp olive oil
  • 1/2 tsp crushed red pepper
  • Kosher salt & freshly cracked black pepper
  • 1 1/2 cups medium shells (dried pasta)
  • 8 oz fresh turkey sausage
  • 2 cloves garlic (minced)
  • 1/2 tsp granulated sugar
  • 1/2 cup half & half
  • 4 cups fresh baby spinach
  • 1/3 cup finely grated Parmesan cheese
  • Reserved pasta water
  • 2 wedges fresh lemon

Instructions

  1. Quarter the cherry tomatoes, chop the bell pepper and onion.
  2. In a large skillet, heat olive oil over medium heat; sauté tomatoes, bell pepper, and onion with salt and crushed red pepper for 7–8 minutes.
  3. Cook pasta in salted boiling water until al dente; reserve some pasta water before draining.
  4. Add turkey sausage and garlic to the skillet; cook for 5–6 minutes until browned.
  5. Stir in sugar and half & half; let simmer until slightly thickened.
  6. Add spinach until wilted, then mix in cooked pasta.
  7. Stir in Parmesan cheese; adjust creaminess with reserved pasta water as needed. Finish with lemon juice.
