Ingredients
- 1 cup cherry tomatoes
- 1/2 red bell pepper
- 1/2 yellow onion
- 1 Tbsp olive oil
- 1/2 tsp crushed red pepper
- Kosher salt & freshly cracked black pepper
- 1 1/2 cups medium shells (dried pasta)
- 8 oz fresh turkey sausage
- 2 cloves garlic (minced)
- 1/2 tsp granulated sugar
- 1/2 cup half & half
- 4 cups fresh baby spinach
- 1/3 cup finely grated Parmesan cheese
- Reserved pasta water
- 2 wedges fresh lemon
Instructions
- Quarter the cherry tomatoes, chop the bell pepper and onion.
- In a large skillet, heat olive oil over medium heat; sauté tomatoes, bell pepper, and onion with salt and crushed red pepper for 7–8 minutes.
- Cook pasta in salted boiling water until al dente; reserve some pasta water before draining.
- Add turkey sausage and garlic to the skillet; cook for 5–6 minutes until browned.
- Stir in sugar and half & half; let simmer until slightly thickened.
- Add spinach until wilted, then mix in cooked pasta.
- Stir in Parmesan cheese; adjust creaminess with reserved pasta water as needed. Finish with lemon juice.
