Ingredients
- 1 pound Italian beef sausage (casings removed)
- 1 medium onion (diced)
- 3 cloves garlic (minced)
- 2 carrots (diced)
- 2 celery stalks (diced)
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- In a large pot over medium heat, crumble and cook the Italian beef sausage until browned; set aside.
- In the same pot, sauté diced onion, carrots, and celery for about 5-7 minutes until softened.
- Add minced garlic and cook for another minute until fragrant.
- Pour in the chicken or vegetable broth, scraping the bottom of the pot to release flavors.
- Return the cooked sausage to the pot and stir well.
- Reduce heat to low and slowly add heavy cream; heat through without boiling.
- Gradually mix in grated Parmesan cheese until melted and creamy.
- Season with salt and pepper to taste; simmer for another 5-10 minutes.
- Serve hot, garnished with fresh parsley.
