  • 4 oz cream cheese
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese (divided)

  • 2 tablespoons unsalted butter
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Cook the shell pasta in salted boiling water until al dente; drain and reserve ¼ cup of pasta water.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Add chicken seasoned with Cajun seasoning and cook until golden brown and fully cooked (about 5-6 minutes per side).
  3. Pour in heavy cream and stir in cream cheese until smooth.
  4. Mix in Parmesan cheese until thickened; adjust consistency with reserved pasta water if needed.
  5. Stir in cooked pasta to coat evenly in sauce.
  6. Add half of the mozzarella cheese, mixing until melted.
  7. Serve topped with remaining mozzarella and garnish with parsley if desired.
