Ingredients
- 1 chicken breast, sliced
- 1 tsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 2 tbsp cream (or Greek yogurt)
- Salt & pepper, to taste
- 1 cup cooked basmati rice
- 1 cup frozen peas and carrots
- 1 tsp butter
Instructions
- In a non-stick skillet, heat olive oil over medium heat and sauté sliced chicken until browned. Add smoked paprika, garlic powder, salt, and pepper.
- Stir in cream (or Greek yogurt) and simmer for about 12 minutes until saucy.
- Meanwhile, prepare basmati rice according to package instructions and fluff with a fork.
- Steam or microwave frozen peas and carrots, then toss with butter and salt.
- Plate the fluffy rice, top with creamy paprika chicken, and serve with buttery veggies on the side.
