Instructions
- Cook the udon noodles according to package instructions in a large pot of boiling water for 3-5 minutes. Drain and set aside.
- In a saucepan, combine low-sodium vegetable broth and full-fat coconut milk over medium heat, stirring until mixed.
- Add white or yellow miso paste, mixing until fully dissolved into a smooth sauce.
- Stir in minced garlic and cook for about one minute until fragrant but not boiling.
- Toss the cooked udon noodles into the sauce until evenly coated.
- Serve hot, garnished with sliced green onions.
