  • ½ cup Mexican crema (or sour cream)
  • ½ cup Cotija cheese (crumbled, or feta as a substitute)
  • 1 garlic clove (minced, optional)
  • 1 jalapeño (finely chopped, optional)
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tsp chili powder (plus extra for topping)
  • Salt to taste
  • Fresh cilantro (for garnish)

Instructions

  1. Heat butter in a skillet over medium heat until melted.
  2. Add corn kernels and sauté until lightly charred for about 5–7 minutes.
  3. In a mixing bowl, combine mayonnaise, crema, garlic (if using), jalapeño (if using), lime juice, chili powder, and salt.
  4. Toss the warm corn into the dressing until evenly coated.
  5. Scoop portions into serving cups.
  6. Top with Cotija cheese, extra chili powder if desired, and cilantro.
  7. Garnish with a lime wedge and serve warm.
