  • 7 oz halloumi cheese, cubed
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1½ cups cherry tomatoes, halved
  • ½ cup heavy cream
  • ¼ cup reserved pasta water
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup fresh basil leaves, torn

Instructions

  1. Cook the short pasta in salted boiling water according to package instructions. Reserve ¼ cup of the pasta water before draining.
  2. In a skillet, heat the olive oil over medium heat. Fry the cubed halloumi cheese until golden brown on all sides, then remove from the skillet.
  3. Sauté minced garlic in the same skillet until fragrant, about 30 seconds.
  4. Add halved cherry tomatoes and stir occasionally until softened.
  5. Pour in heavy cream and reserved pasta water; stir to combine into a creamy sauce.
  6. Toss in the drained pasta, coating it well with the sauce.
  7. Add fried halloumi and torn basil leaves; gently fold together.
  8. Season with salt and pepper; heat through before serving.
