- 8 oz short pasta
- 7 oz halloumi cheese, cubed
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1½ cups cherry tomatoes, halved
- ½ cup heavy cream
- ¼ cup reserved pasta water
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup fresh basil leaves, torn
Instructions
- Cook the short pasta in salted boiling water according to package instructions. Reserve ¼ cup of the pasta water before draining.
- In a skillet, heat the olive oil over medium heat. Fry the cubed halloumi cheese until golden brown on all sides, then remove from the skillet.
- Sauté minced garlic in the same skillet until fragrant, about 30 seconds.
- Add halved cherry tomatoes and stir occasionally until softened.
- Pour in heavy cream and reserved pasta water; stir to combine into a creamy sauce.
- Toss in the drained pasta, coating it well with the sauce.
- Add fried halloumi and torn basil leaves; gently fold together.
- Season with salt and pepper; heat through before serving.
